5 large egg yolks
1/2 cup of bocha sweet or monk fruit
1 pinch sea salt
1 1/2 cups of unsweetened almond milk or coconut milk
1 cup of heavy cream (1 skipped this and used nutpods for coconut milk and added coconut cream)
1/4 protein powder of choice vanilla. I use Pure Paleo from Designs for Health(You can get this through my store at 10% off
2 TBL Greens first chocolate powder (again on my store link for 10% off) 20 servings of fruits and veggies.
2 TBL Valrhona cocoa powder(you can get on amazon)
You can just use 1/4 cup of cocoa powder if you do not want to add the super greens.
You can add coconut flakes, chocolate chips, almond butter. Whatever you want in your ice cream.
In a medium bowl, whisk together the egg yolks, monk fruit or bocha sweet, sea salt until combined and light yellow in color. Set aside.
In a small saucepan, whisk together the almond or coconut milk, cream, cocoa powder, Greens chocolate and protein powder. Heat over medium heat, until it starts to simmer. Remove from heat.
Very slowly, pour the hot cream mixture into the egg yolk mixture while whisking constantly. (Doing this in a thin stream and whisking vigorously will prevent scrambling the egg.)
Once the custard is combined and smooth, transfer the mixture back to the saucepan. Return to the stove over low heat and heat, stirring frequently until the mixture reaches 170 degrees F about 3-5 minutes.
Remove from heat. Cover and refrigerate for at least 4 hours, until very cold. We actually put in cold ice cream maker bowl in the freezer for 15 minutes. You put the ice cream maker bowl in the freeze overnight, then pour custard in the frozen bowl and put back in the freezer for 10 to 15 minutes.
Then take out of freezer and churn according to your specific ice cream maker instructions. Basically, until the ice cream is the texture of soft serve or how you like it.
Cuisinart ICE-21RP1 1.5-Quart Frozen Yogurt, Ice Cream and Sorbet Maker, Double Insulated Freezer Bowl eliminates the need for Ice and Makes Frozen Treats in 20 Minutes or Less.
This is the ice cream maker we have. $65.00 They have more expensive ones, but you do not really need that.
